Also, for the future, I'm thinking we should probably do this as part of the updates to the Rust version used in CI as well since we're highly unlikely to actually update this every time we use a new API or rely on a bugfix in a particular release

It's probably worth having a larger conversation about how we manage MSRV for Wasmtime, but "MSRV is whatever we test on in CI" is certainly a practical choice of policies.
