Mostly focused on changes to clocks.
This was done manually as vendor-wit.sh needs to be updated.

Thanks! This'll require updating vendor-wit.sh since we are trying to disallow manual edits to WITs. Is it too difficult to update it in this case? Or is there a reason this should be exceptional?

As a heads up a mixture of https://github.com/bytecodealliance/wasmtime/pull/12250 and https://github.com/bytecodealliance/wasmtime/pull/12327 should get around to updating vendor-wit.sh meaning that updating to 0.2.9 should be, hopefully, a simple matter of updating a version and running the script.
